Marty’s “smokin” baked beans Top Coolers of ice also available We handle all the necessary arrangements to provide you with the freshest butchered pork shoulders around. We slow roast them in our charcoal and wood pit for 18-20 hours. We pull the pit directly to your party location. The pit is fully self-contained so there are no open fires or mess for you to clean up. These fresh shoulders are roasted to perfection and are actually cooking on the way to your party.

Barbeque Is a term used in the United States for an informal style of outdoor entertaining where barbecued food is served. It is a method of cooking by which meat, poultry, fish or other food is slowly cooked in a pit or on a spit, using hot coals or hardwood as a heat source. The food is basted, usually with a mop sauce, to keep it moist. South Carolina and Texas boast two of the most famous American regional barbecue styles. Texas for brisket and South Carolina for pulled pork. When most folks barbeque, they fire up the grill, let the charcoal briquettes glow white and slap on a steak, chicken or a burger. This process is quick, but it does little to enhance the flavor or tenderize the meats. Although we all utilize this method at our homes. Marty's catering uses an entirely different style, pit barbeque.
The pit barbeque is an art form that requires plenty of time and patience. The meat is seasoned and cooked in an enclosed pit at low temperatures, usually in the 200 to 275 degree range using indirect heat that's produced by a slow burning charcoal and hardwood fire. The meat is both smoked and cooked at the same time. This type of cooking produces some very flavorful meat and tenderizes even the toughest cuts.
One very popular misconception is that BBQ sauce is put on the meat while it's in the pit. Most Pit Masters would be very suspicious of meat that was served with the sauce already on it. Real Pit Barbeque is served with the sauce on the side so that it can be applied to the diners specific tastes. Bon Appetit
